You really have to stop doing everything you’re doing and rush to make these bean burgers. I promise you that any flavorless, boring veggie burger idea will go out of your mind forever when you try it. These burgers aren’t just a flavor, nutrition, and fun dish. They are super easy to make and are perfect for any day.


Mole is one of the dishes that best represent Mexican cuisine. Mole is a sauce of pre-Hispanic origin made with a mixture of chili peppers, seeds, and spices. It is still used in special celebrations such as weddings, fifteen-year-old birthday parties, and important days in Mexico.

Mole is one of the most Mexican sauces that you can have, and you can find it in many places, but a good mole, only in certain places. This mole from the Guelaguetza is the most authentic delicious Oaxacan mole I’ve had, it’s authentic and very good.

When I met the family behind this wonderful mole, I understood why that flavor has that level of perfection in every bite. This mole is made with heart, each ingredient of the mole is there for a reason, each ingredient is authentic and real, the combination of all makes it pure MAGIC.

The traditional way to use mole is to bathe pieces of chicken or meat and serve them with corn tortillas, rice, and refried beans. It is also used in tamales, enmoladas, chilaquiles or sopes. Mole is a sauce full of flavor and delicious spice that can be used in many other dishes.

I thought of making these black bean vegan burgers with mole and roasted pineapple to use this sauce in an easier and more modern way. The pineapple being bittersweet is perfect with the spicy notes from the mole.

INGREDIENTS TO MAKE THE Black bean burger with mole and grilled pineapple

  • Pineapple. I use canned pineapples, I like smaller slices they fit perfectly on top of the bean burger.
  • Black beans. If you use canned black beans, drain them and give them a rinse; if you use beans cooked at home, drain them well.
  • Cooked rice. I use brown rice, but any rice works.
  • Sunflower seeds. If you want, you can substitute them for pumpkin seeds or pecans.
  • Black mole, you could also use red mole or coloradito mole.
  • Hamburger buns
  • Red onion slices, can be pickled or raw onion
  • Cilantro
  • Vegan mayonnaise

Marinate the pineapple in the mole sauce, water, vinegar, oil, and salt for a few minutes. Set aside and make the bean burgers.

To make the hamburgers, you put all the ingredients in the food processor (affiliate link) (affiliate link), form the hamburgers, and put them in a hot pan or the oven to brown. In the same pan, you put the pineapple slices until grilled on both sides.

Then heat the bread, spread a tablespoon of mayonnaise on one side, place on top the hamburger and the pineapple slice on top. Finish with onion slices and cilantro leaves.


You can make the hamburgers in the oven, just put them on a baking sheet with parchment paper or a silicone mat and put them in for 20 minutes at 350ºF.

Another very good tip,  is that in order to make them the same size use a round cookie cutter. Place the cookie cutter on a flat surface and fill it with the burger mixture. Press until firm and remove the cookie cutter carefully.

  • Food processor
  • Skillet



  • 6 slices of pineapple (canned or natural)
  • 1 tablespoon mole negro paste
  • 2 tablespoons water
  • 1 tablespoon neutral tasting oil
  • 1/4 teaspoon apple cider vinegar
  • Pinch sea salt


  • 1 cup black beans (without liquid)
  • 2 cups cooked rice I use brown rice
  • 1/3 cup sunflower seeds
  • 2 tablespoons mole negro paste
  • pinch of salt

To serve

  • 6 slider buns
  • 1/4 red onion thinly sliced
  • 6 cilantro sprigs
  • 6 teaspoons mayonnaise or cream (I use vegenaise)


  • In a bowl mix the mole paste with the two tablespoons of water until a thick salsa is made. Add the oil, vinegar, and salt. Mix well.
  • Add the pineapple slices, cover them well with the mole negro sauce and set aside.
  • In the bowl of the food processor put the rice, beans, sunflower seeds, tablespoons of mole paste and a pinch of salt.
  • Pulse it several times until well mixed, form 6 burger patties. In a non-stick skillet over medium heat cook the patties, when they are firm and golden from the bottom, about 15 minutes, flip and leave ten more minutes.
  • Meanwhile, the patties are ready, spread each side of the slider buns with a tablespoon of mayo or cream.
  • When the hamburgers are ready, put them on top of one side of the slider and set them aside.
  • Clean with a paper towel the skillet where you cooked the patties. Put the slices of the marinated pineapple and let them brown, about five minutes on each side. 
    When done place on top of each pattie.
  • To finish them, put some sliced red onion and cilantro.


If the black bean pattie mixture is too sticky add 1/4 of a cup of panko or another type of bread crumbs.
