Smashed potatoes

This recipe for smashed potatoes is easy, it is a healthy recipe and it is a vegan recipe that everyone will like.

These little- smashed potatoes are the best snack or side dish.

A few weeks ago, I read a study that shows that all organic fruits and vegetables are up to 60% more nutritious than those produced conventionally.

If we put it in other words, we can say that for the same amount of food we eat, if we eat it, organic will have 60% more nutrients; vitamins, minerals, etc. So it is worth investing in organic food. And yes, when we find organic produce that is accessible to us, we must buy it and consume it. Of course, I know it is not always possible. Sometimes the price is too high, sometimes there is none, or it isn’t easy to find this product. But, if you can, it’s worth it.

The good thing is that there is a list every year that tells us which products are the cleanest and which are the most contaminated with pesticides. This list helps us to choose better and buy better. This does NOT mean that you will not eat it if it is not organic.

But it let us know that if we buy conventionally grown produce, we should wash it thoroughly and peel it. It is also proven (in another study) that just by consuming one more piece of fruit or vegetable per day, our possibility of contracting a disease decreases considerably. So, isn’t it a great reason to eat more fruits and veggies???

That’s why I like to post recipes like this. This smashed potatoes recipe is more of an idea than a traditional recipe.

These potatoes are cooked in salty water, and when they are ready, you smash them and bake them to brown them a bit. You can serve them with salt and pepper, with fresh herbs like cilantro or chives, with green sauce, a splash of vinegar, siracha-vegan mayo, pesto, or pesto-mayo, chipotle sauce

Ingredients
  

  • 12 small or fingerlings potatoes
  • 2 tablespoons of olive oil
  • Salt

Instructions
 

  • Boil the potatoes in salted water.
  • Pre-heat the oven to 400ºF-450.
  • Potatoes are done when poked with a fork and no resistance is there. Drain them and let them cool down a bit.
  • When you can handle them without burning, smash them with your hands.
  • Put them on a baking sheet and drizzle some olive oil on top. Put them in the oven until golden brown. I like to check them every 10 minutes.
  • They are ready when you see that the edges are golden brown, about 10 minutes.

Notes

To serve, stir a tablespoon of mayonnaise (vegan) with a little bit of chipotle peppers in adobo sauce or sriracha sauce. This recipe first appeared in Piloncillo & Vanilla in September 2014.
