About this recipe
Whipped cream with aquafaba is a 100% vegetable alternative to traditional whipped cream and is easy to make. This vegan whipped cream is perfect for finishing cakes, pies, or even a nice cup of hot chocolate.
The aquafaba is the liquid that comes with the canned legumes or remains after cooking. The most common aquafaba is chickpeas. This liquid with golden properties is often discarded without realizing its amazing culinary properties.
Where is the magic? When properly whipped, this liquid becomes incredibly fluffy and can substitute egg and whipping cream in baking recipes.
Benefits of aquafaba
Egg substitute: Aquafaba can be used as an egg substitute in many recipes, especially in baked goods and desserts. This makes it an excellent choice for vegan diets or people with egg allergies or intolerances.
Low-fat and low-calorie alternative: Aquafaba is low in fat and calories, unlike egg and cream. This can make it a good choice for people looking for lighter alternatives in the kitchen.
Waste reduction: Using aquafaba instead of throwing it away is an excellent way to reduce food waste. It is a creative and useful way to use all the products when buying canned legumes.
Versatile in the kitchen: Aquafaba can be used in various recipes, from meringues, pavlovas, and mousses to mayonnaises and dressings. It can also help create a fluffy texture in breads and cakes.
Easy to find: Since it is found in cans of legumes such as chickpeas, it is a simple ingredient and one that many of us already have in our pantry.
Ingredients for making aquafaba whipped cream
- The liquid is from a can of chickpeas (aquafaba) or another legume. I always make it with chickpeas.
- Cream of tartar, apple cider vinegar, or lemon juice, an acid is needed; this will help stabilize the smoothie. Cream of tartar will always be my favorite ingredient for making meringues.
- White sugar or powdered sugar. Start with half a cup and then add more if you want it to be sweeter.
- Extract seeds of a vanilla bean or vanilla paste
How to make vegan whipped cream
- Start by pouring the aquafaba into a large bowl. Make sure your bowl is completely clean and dry before you begin.
- Add the cream of tartar or apple cider vinegar.
- Using an electric mixer, begin beating at low speed, gradually increasing as the liquid becomes frothy. This process can take 10 to 15 minutes, so be patient; every good dessert takes time.
- When the mixture begins to form soft peaks, it is time to add the powdered sugar. Do it slowly, spoonful by spoonful, without stopping whisking.
- Once all the sugar is incorporated, add the vanilla extract.
- Continue beating until stiff peaks form. You should end up with a soft and fluffy cream similar in texture to traditional whipped cream.
Tips for the best aquafaba
Make sure everything is dry: Water or grease can interfere with foaming. Make sure your bowl and utensils are completely dry before you begin.
Add stabilizers: Powdered sugar and cream of tartar help stabilize the whipped cream and allow it to hold its shape longer.
Add the sugar gradually: If you are sweetening your whipping cream, add the sugar gradually while you are whipping the cream. This allows the sugar to dissolve properly, and the cream does not run down.
Do not over-whip: Over-whipping the cream can cause it to separate and become grainy. Watch your cream as you whip it and stop when you reach soft or firm peaks, depending on your preference.
Serve immediately or refrigerate: Whipped cream is best when served immediately after whipping. If it goes down, beat again.
How to use aquafaba whipped cream
Fruit desserts: Add a dollop of aquafaba whipped cream on top of a slice of fruit tart, apple pie, or fruit crumble for an extra touch of sweetness.
Hot chocolate: Add some aquafaba whipped cream to your hot chocolate.
Vegan meringues: Use whipped aquafaba to make vegan meringues. You will only need to add a little more sugar and perhaps a little vanilla essence.
Cakes and cupcakes: aquafaba whipped cream can be used as a topping for cakes and cupcakes. You can also add food coloring if you want to make a colorful topping.
Mousses and puddings: You can use aquafaba whipped cream as a base for making vegan mousses and puddings.
