What is sriracha?
Sriracha sauce is a Thai hot sauce made with chilies, sugar, salt, garlic, and vinegar. It is also known as the rooster sauce or the sauce with the green cap. How do you pronounce it? It is pronounced see-ROTCH-ah.
But the truth is, no matter how you call it or how you pronounce, it has slowly become one of the favorite hot sauces of all time. This hot sauce is so popular that now you can find it next to a bottle of ketchup or mayo.
Ingredients in sriracha
- Green apple cut into pieces and seeded. I use granny smith and use apples instead of sugar.
- Red chilies without stems. You can use red jalapeños, which are best for the sauce, or red Fresno chilies.
- Garlic
- Soy sauce you can substitute with tamari sauce or coconut aminos.
- Apple cider vinegar or white wine vinegar
How to make sriracha hot sauce?
- Put all the ingredients in the blender. When perfectly integrated and blended, put them on the stove in a pot over medium heat. When they release the first boil, lower the heat and let it boil for five minutes.
- Check the seasoning and adjust for salt if necessary.
- Transfer to a jar with a lid and store in the refrigerator.
Tips and tricks for the best sriracha
- If you can’t find red jalapeños, use Fresno chilies.
- The apple is meant to give a bit of tartness and sweetness to the sauce. If you feel it needs a bit more sweetness, add a tablespoon of sugar.
- Add a bit of more water if your blender is not as powerful as a vitamix.
- Make homemade sriracha mayo by mixing two parts vegan mayo, one part hot sauce.
How spicy is the sriracha?
This is only moderately spicy. Surprisingly, the sriracha sauce is not as spicy as you would think. The spiciness of the sauce depends on the spiciness of the chili, not on the recipe.
And red jalapeños are not as spicy as they seem, on the scale of Scoville they have a level of 2500 -8000 and a serrano pepper has a level of 6000-23000.
