  • 5 medium tomatoes
  • 1 piece chipotle chili in adobo
  • ¼ white onion
  • 2 cloves of garlic
  • 6 cups water
  • 1 cup dry lentils
  • ½ cup carrots diced
  • ½ cup zucchini diced
  • ½ cup potato diced
  • 2 teaspoons Kosher salt

Instructions
 

  • First, make the broth by blending tomato, onion, garlic, and chipotle. Add a bit of water to facilitate blending.
  • Once you have this mixture ready, heat a little oil in a large pot and pour in the blended broth. Cook over medium heat, stirring occasionally, until the mixture deepens in color and the flavors are concentrated.
  • The next step is to add the lentils and vegetables. Add the rest of the water. Reduce the heat and let the soup simmer slowly until the vegetables are tender and fully cooked, taste and serve.

Notes

Storing and freezing: The lentil soup stays in the refrigerator for five days. To freeze, let it cool completely and store it in airtight containers. It can last frozen for up to 3 months. When defrosting, slowly in the refrigerator and reheat over low heat, adding a little water if necessary.
Green lentils: These are the best for making Mexican lentil soups. They maintain their shape well after cooking, although they cook slower than the red ones. Their flavor is mildly nutty, and their firm texture makes them ideal for dishes where you want the lentils to stand out.
