- Lentils, using green lentils, is best.
- Chipotle, chipotles in adobo. If you keep them ground in paste, use only one tablespoon, as I do.
- Vegetables. This soup goes well with any vegetable. Use the combination you like best.
How to make chipotle lentil soup?
First, make the broth by blending tomato, onion, garlic, and chipotle.
Then, we put it in a pot with oil and let it change color.
Finally, we leave all the vegetables until they are cooked.
Tips for the best soup
- Lentils: Lentils do not need prior soaking, but it is good to rinse them.
- Mixed vegetables: Cut them into uniform pieces so that they cook evenly.
- Serve: You can add some fresh cheese, cream, chopped cilantro, or avocado.
Mexican Lentil Soup with Chipotle and Vegetables

- 5 medium tomatoes
- 1 piece chipotle chili in adobo
- ¼ white onion
- 2 cloves of garlic
- 6 cups water
- 1 cup dry lentils
- ½ cup carrots diced
- ½ cup zucchini diced
- ½ cup potato diced
- 2 teaspoons Kosher salt
Instructions
- First, make the broth by blending tomato, onion, garlic, and chipotle. Add a bit of water to facilitate blending.
- Once you have this mixture ready, heat a little oil in a large pot and pour in the blended broth. Cook over medium heat, stirring occasionally, until the mixture deepens in color and the flavors are concentrated.
- The next step is to add the lentils and vegetables. Add the rest of the water. Reduce the heat and let the soup simmer slowly until the vegetables are tender and fully cooked, taste and serve.
