Ingredients
 
 

  • 1 cup of almond milk
  • 1 teaspoon of apple vinegar
  • 2 cups of all purpose flour
  • ½ teaspoon of baking powder
  • ½ teaspoon of salt
  • 1 teaspoon of baking soda
  • 2 teaspoons of cinnamon powder
  • ½ cup of maple syrup
  • ¼ cup of apple puree
  • ¼ cup vegetable oil I use avocado
  • 1 teaspoon vanilla
  • 1 ½ cups diced apples
  • 1 tablespoon fresh thyme

Instructions
 

  • Turn the oven to 350ºF and prepare a muffin tray with liners or oil it up.
  • Measure the cup of milk and add the teaspoon of vinegar. Leave aside.
  • In a large bowl, mix flour, baking powder, salt, baking soda, and cinnamon.
  • Then, add the milk with the vinegar, the apple puree, the maple syrup, the oil, and the vanilla.
  • Mix well and put the diced apple and thyme. Divide the mixture on the tray and bake for 20-25 minutes or until a toothpick comes out clean when inserted into a muffin.

Notes

These apple and thyme muffins are delicious if you sprinkle brown sugar on top before putting it in the oven.
