Apple and thyme muffins
Ingredients
- 1 cup of almond milk
- 1 teaspoon of apple vinegar
- 2 cups of all purpose flour
- ½ teaspoon of baking powder
- ½ teaspoon of salt
- 1 teaspoon of baking soda
- 2 teaspoons of cinnamon powder
- ½ cup of maple syrup
- ¼ cup of apple puree
- ¼ cup vegetable oil I use avocado
- 1 teaspoon vanilla
- 1 ½ cups diced apples
- 1 tablespoon fresh thyme
Instructions
- Turn the oven to 350ºF and prepare a muffin tray with liners or oil it up.
- Measure the cup of milk and add the teaspoon of vinegar. Leave aside.
- In a large bowl, mix flour, baking powder, salt, baking soda, and cinnamon.
- Then, add the milk with the vinegar, the apple puree, the maple syrup, the oil, and the vanilla.
- Mix well and put the diced apple and thyme. Divide the mixture on the tray and bake for 20-25 minutes or until a toothpick comes out clean when inserted into a muffin.
