There is one secret, though: the magic ingredient that makes your granola clump: almond butter (I use homemade almond butter). You can use any nut butter that you wish, peanut butter, cashew butter or store-bought almond butter.

  • Mix the oats, almonds, sugar, pumpkin seeds, spices, and salt in a bowl. In another bowl, combine the almond butter, coconut oil, maple syrup, and vanilla. Stir until well combined.
  • In a separate bowl, mix the almond cream, coconut oil, maple honey, and vanilla.
  • Mix everything together until well integrated.
  • Put the granola in a single layer on a baking tray lined with parchment paper. Press the mixture with your hands and put it in the oven for about 50 min.

BREAKFAST. This chunky granola is my perfect and favorite vegan breakfast when combined with tangy cashew yogurt and almond milk or as a topping for a berry smoothie bowl.

  • The most difficult part of this vegan granola recipe is waiting for it to bake. It takes time, about an hour or so.

Ingredients
  

  • 4 cups rolled oats
  • 1 cup raw almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon of allspice
  • 1/4 teaspoon nutmeg, optional
  • 5 tablespoons almond butter
  • 1/4 cup melted coconut oil
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla

Instructions
 

  • Preheat the oven to 275°F (135°C).
  • In a large bowl, combine the oats, almonds, sugar, pumpkin seeds, spices, and salt.
  • In a separate bowl, mix together the almond butter, coconut oil, maple syrup, and vanilla extract. Once fully combined, pour this mixture into the dry ingredients.
  • Use a wooden spoon to mix everything thoroughly until well integrated.
  • Spread the granola in a single layer on a baking tray lined with parchment paper. Press down on the mixture gently with your hands.
  • Bake in the preheated oven for about 50 minutes. Check on it after 25 minutes and rotate the pan for even cooking.
  • The granola is ready when it feels firm.
  • Remove it from the oven and allow it to cool completely.
  • Once cooled, break it into pieces and store in tightly sealed jars in your cupboard.
