- All-purpose flour, you could use whole wheat flour, but the texture of the scones may be a bit dense.
- Baking powder
- Pumpkin pie species, see notes in the recipe card or use storebought. Make sure it is fresh, and the smell is amazing.
- Coconut oil, substitute with any vegetable oil of your choice.
- Pumpkin puree, you can use homemade or store bought.
- Vegetable milk, I like to use almond milk or oat milk.
- Maple syrup, make sure it is Maple syrup and not corn syrup.
MAPLE GLAZE
- Powdered sugar, make sure you sift it before using.
- Coconut oil
- Maple syrup
- Pumpkin pie spices
- Chopped walnuts, to top the pumpkin scones. If you are allergic to nuts, sprinkle brown sugar on top.
How to make classic vegan pumpkin scones
- In a large bowl, whisk your dry ingredients: the flour, baking powder, spices, and salt.
- Add the wet ingredients: coconut oil, pumpkin puree, milk, and maple syrup. Mix well.
- Prepare a baking sheet with parchment paper or a silicone mat. Add the scone dough and form a 1 1/2 -2 inch thick disk.
- With a chef’s spatula or a large knife, divide the dough disc into eight wedges.
- Bake for 18-20 minutes or until you insert a toothpick and it comes out clean.
Prepare the scone glaze
- Prepare the glaze by mixing confectioners’ sugar, maple honey, and spices in a bowl. If the mixture is too thick, add water one teaspoon at a time.
- Remove the scones from the oven and let them cool on a wire rack for about 5 minutes. Drizzle the icing on top of the scones and sprinkle with the chopped walnuts.
Tips for the best scones
- Starbucks: These scones are inspired by Starbucks’ Pumpkin Scones
- Do not over-mix: Vegan scones are super easy to prepare; the only trick is not to over-mix the dough.
- Puree: I use pumpkin puree from Amazon but normally make it at home.
- Form the scone. Make one circle with the dough and then slice into 8 wedges or make 8 different ones. I like to form a disk with the vegan scone dough and then cut it into 8 pieces.
- About the glaze. The maple syrup glaze is the best; if you love maple syrup, you should also try these vegan banana doughnuts with maple glaze.
