- Onion, finely chopped, and you can use the onion that you want, yellow, red, or white
- Garlic, finely chopped or pressed with a garlic presser
- Chili powder, you can use ancho chili, chipotle chili, or chili mix
- Cayenne pepper, a pinch
- Ground cumin
- Tomato puree
- Water
- Black beans cooked at home or canned, drained, and rinsed
- Dried oregano and if you find Mexican oregano better.

Ingredients for Poblano Cashew Crema
- Poblano Peppers – Roasted, peeled, and deseeded
- Cashews – Soaked in hot water
- Onion – Adds depth
- White Wine Vinegar – Or rice vinegar for a mild tang
- Lemon Juice – Freshly squeezed

Healthy Vegan Frito Pie
Ingredients
For the vegan black bean chili
- 2 tablespoons olive oil or neutral tasting oil
- 1 cup finely chopped onion
- 3 finely chopped garlic cloves
- 2 teaspoons chili powder mixture
- 1/4 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- 1-2 teaspoons of salt
- 1 cup tomato puree
- 1/2 cup water
- 3 cups black beans or 2 cans rinsed and drained
- 1 teaspoon dried oregano
Poblano cashew crema
- 1 cup raw cashews soaked in two cups of hot water for two hours or overnight
- 2 roasted poblano peppers seeded and stemmed
- 3/4 -1 cup water
- 1/4 onion small * optional
- 2 tablespoons white wine vinegar or rice vinegar
- 1/2 teaspoon salt
- 1 teaspoon lemon juice
For serving
- Fritos
- pickled jalapeños
- chopped cilantro
- sliced chives
- diced avocado or guacamole
Instructions
Step 1: Soak the Cashews
- Soak cashews in 2 cups of hot water for at least 2 hours or overnight.
Step 2: Make the Vegan Chili
- Heat oil in a large pot over medium heat.
- Add onion and sauté until translucent (about 3-4 minutes).
- Stir in garlic, chili powder, cayenne, cumin, and salt. Cook for 2-3 minutes, stirring occasionally.
- Add tomato purée, black beans, and oregano. Stir well, cover, and let simmer for 10 minutes.
- Taste and adjust seasoning if needed.
Step 3: Make the Poblano Cashew Crema
- Drain the soaked cashews.
- In a blender, combine cashews, roasted poblano peppers, optional onion, vinegar, lemon juice, and salt.
- Add ½ cup water and blend until smooth. Gradually add more water until desired consistency is reached.
Step 4: Assemble the Vegan Frito Pie
- Place a generous amount of Fritos in a bowl or open an individual bag (walking taco style).
- Spoon the black bean chili over the chips.
- Drizzle with poblano cashew crema.
- Top with cilantro, scallions, pickled jalapeños, and avocado or guacamole.
