  • Cashews – Soaked in hot water

  • White Wine Vinegar – Or rice vinegar for a mild tang

Ingredients
  

For the vegan black bean chili

  • 2 tablespoons olive oil or neutral tasting oil
  • 1 cup finely chopped onion
  • 3 finely chopped garlic cloves
  • 2 teaspoons chili powder mixture
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1-2 teaspoons of salt
  • 1 cup tomato puree
  • 1/2 cup water
  • 3 cups black beans or 2 cans rinsed and drained
  • 1 teaspoon dried oregano

Poblano cashew crema

  • 1 cup raw cashews soaked in two cups of hot water for two hours or overnight
  • 2 roasted poblano peppers seeded and stemmed
  • 3/4 -1 cup water
  • 1/4 onion small * optional
  • 2 tablespoons white wine vinegar or rice vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice

For serving

Instructions
 

Step 1: Soak the Cashews

  • Soak cashews in 2 cups of hot water for at least 2 hours or overnight.

Step 2: Make the Vegan Chili

  • Heat oil in a large pot over medium heat.
  • Add onion and sauté until translucent (about 3-4 minutes).
  • Stir in garlic, chili powder, cayenne, cumin, and salt. Cook for 2-3 minutes, stirring occasionally.
  • Add tomato purée, black beans, and oregano. Stir well, cover, and let simmer for 10 minutes.
  • Taste and adjust seasoning if needed.

Step 3: Make the Poblano Cashew Crema

  • Drain the soaked cashews.
  • In a blender, combine cashews, roasted poblano peppers, optional onion, vinegar, lemon juice, and salt.
  • Add ½ cup water and blend until smooth. Gradually add more water until desired consistency is reached.

Step 4: Assemble the Vegan Frito Pie

  • Place a generous amount of Fritos in a bowl or open an individual bag (walking taco style).
  • Spoon the black bean chili over the chips.
  • Drizzle with poblano cashew crema.
  • Top with cilantro, scallions, pickled jalapeños, and avocado or guacamole.
