  • In a blender, combine the lime juice, lime zest, ginger, garlic, soy sauce, and rice vinegar. Blend until smooth.
  • Add the cilantro leaves and olive oil to the blender. Blend again until the cilantro is well incorporated and the dressing is smooth.
    NOTE: You can also add the cilantro and oil after blending the other ingredients and just mix them in. It's not necessary to blend them.
  • Give the dressing a good mix and drizzle it over your favorite salads, roasted veggies, or use it as a dip

Fresh Romaine Salad with Cilantro Ginger Dressing
  • 2 lettuce Romain heads, washed and cut into pieces
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup pumpkin seeds
Prepare the Romaine Lettuce: Wash the romaine lettuce heads thoroughly under cold running water. Shake off excess water and pat dry with a clean kitchen towel or paper towels. Cut the lettuce into bite-sized pieces and place them in a large salad bowl.
Add Cherry Tomatoes: Rinse the cherry tomatoes and halve them. Add the halved cherry tomatoes to the bowl with the lettuce.
Dice the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado into small cubes and add it to the salad bowl.
Add Pumpkin Seeds: Sprinkle the pumpkin seeds over the salad.
Toss the Salad: Gently toss all the ingredients together to mix them evenly. Be careful not to mash the avocado.
Dress and Serve: Drizzle the Cilantro Dressing with Ginger and Soy Sauce over the salad just before serving. Toss again to coat all the ingredients with the dressing. Serve immediately and enjoy!
