- 1/4 cup lime juice
- Zest of one lime
- 1- inch piece of ginger
- 1 garlic clove
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/2 cup olive oil
- 1 cup fresh cilantro leaves packed
Instructions
- In a blender, combine the lime juice, lime zest, ginger, garlic, soy sauce, and rice vinegar. Blend until smooth.
- Add the cilantro leaves and olive oil to the blender. Blend again until the cilantro is well incorporated and the dressing is smooth.NOTE: You can also add the cilantro and oil after blending the other ingredients and just mix them in. It's not necessary to blend them.
