How to make the perfect black pepper stir-fry noodles?

The first step is to gather all your ingredients, cook the noodles accordingly, and make the sauce.

Add a tablespoon of vegetable oil to a hot, non-stick pan and sautée the shiitake mushrooms.
Then add the sliced celery and saute for 30 seconds to a minute.

To finish up the vegan noodle stir-fry you need to add the cooked noodles and the sauce. Mix carefully so everything is properly coated.
Finish with seasame seeds, more black pepper and if you wish sliced scallions.

Equipment
- 1 small mixing bowl
- 1 10-in non-stick frying pan
Ingredients
- 4 garlic cloves grated
- 2 tbsp grated ginger
- 1 tbsp vegetable oil plus 1 tbsp extra for sauteeing the vegetables
- 1/2 cup soy sauce
- 2 tbsp maple syrup
- 2 tbsp sesame oil, toasted
- 1 tsp salt
- 1 tbsp freshly ground black pepper
- 16 oz Noodles of your choice
- 1.5 lbs Shiitake mushrooms sliced
- 1 cup celery, sliced about half an inch slaiced
- Sesame seeds for garnish
Instructions
- In a small bowl, whisk together soy sauce, grated ginger, grated garlic, maple syrup, vegetable oil, sesame oil, salt, and black pepper.
- Cook noodles according to package instructions.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add sliced Shiitake mushrooms and stir-fry for 3-4 minutes. Add the celery.
- Add the noodles to the pan and pour the sauce over the mushrooms and celery and stir-fry for an additional 2-3 minutes.
- Serve the stir-fry and garnish with sesame seeds.
Notes
- Feel free to choose any noodles you prefer. The choice is yours, from classic ramen and udon to soba noodles and even pasta.
- You can use low sodium soy sauce.
- Sub the shiitake mushrooms with cremini or even buton mushrooms.
