I have been reading the labels of everything we eat for YEARS and trying to have a healthy balanced lifestyle. But years ago, this plant-based lifestyle was not cool at all; on the contrary, it was super weird, and I was the witch of the story who did not give sweets to her children. But what they didn’t know is that I did, but I gave them homemade sweets like these vegan cereal chocolate bars.
WHY you should MAKE THESE CHOCOLATE CEREAL BARS?
- Because they are like storebought chocolates but better. They have the great benefit that we know exactly what ingredients they have in them.
- Because you’re going to be your child’s superhero when they see that you know how to make sweets at home.
- Because you can make them with sugar or without sugar. Because you can use puffed amaranth, millet, barley cereal, whichever you like the most.
- Because eating well and following a plant-based vegan diet doesn’t really deprive us of anything, not sweets, not snacks, not delicious things. We just eat them prepared in a different way.
Ingredientes for the vegan cereal chocolate bars
- Melted coconut oil, for this recipe it is important to use coconut oil, it cannot be substituted with another vegetable oil.
- Almond milk, you can use almond milk or any other type of milk that you like as long as it is plant-based milk.
- Cocoa, look for cocoa without sugar or other ingredients. Hot chocolate powder will not work in this recipe.
- Dark chocolate with more than 60% cocoa, and read the label, look for one with little to none sugar and without dairy.
- Almond butter, I love the homemade almond butter one, but use whatever you have. You can even substitute it for peanut butter.
- Vanilla
- Salt
- Oats, look for whole oats, not instant oats, or quick cooking ones.
- Puffed cereal, use one without sugar. It can be puffed rice, amaranth, millet, etc. Or a mixture of several as in the photo of the ingredients.
How to make vegan cereal chocolate bars?
- Prepare a brownie pan with parchment paper.
- In a double boiler, in a large bowl, melt the chocolate. When it’s melted, add the oil, milk, and cocoa. Keep mixing and then add the almond butter.
- Once everything is integrated, add the oats and mix, then the cereal or amaranth.
- Pour the mixture into the mold, and with the back of a kitchen spoon or spatula, flatten it out so it’s even.
- Please put it in the fridge to set or freezer to set faster.
- When you take it out of the fridge, take the vegan cereal chocolate bars out of the brownie mold and cut it into equal pieces.
TIPS & IDEAS
- I am so happy that my children eat these chocolate and cereal bars, and I give my children a piece a day for dessert. Sometimes I wrap them in parchment paper and put them in the lunch box.
- You can also make them with puffed rice, puffed amaranth, and they will be delicious.
- The idea here is to get the best chocolate you can find—the one with the highest percentage of cocoa and the least amount of ingredients on the label.
- These cereal chocolate bars must be stored in the cupboard, in a dark and dry place.
