This spicy Mezcal Cocktail is the perfect mix of smoky and sweet, with a little bit of spice to boot. Made with mezcal, lime juice, jalapeño simple syrup, and soda, it’s sure to become your new favorite drink!

What is mezcal?
Mezcal is a distilled alcoholic beverage made from the agave plant, typically found in the Mexican states of Oaxaca, Durango, Guerrero, and Zacatecas. Mezcal can be made from any type of agave, but most mezcales are made from the espadín agave.
MEzcal and tequila are not the same
Tequila is a mezcal, but not all mezcales are tequilas. Tequila is made from the blue agave plant, while mezcal can be made from any type of agave.
Tequila is also required to be made in certain regions of Mexico, while mezcal can be made anywhere in the country. Finally, tequila must be aged in oak barrels for at least two months, while mezcal does not have to be aged.

How to drink mezcal
There is no one way to drink mezcal, as different people have different preferences. Some people like to drink it neat, while others prefer to mix it with other beverages.
When to drink mezcal
When you are with friends is the best time to be sipping on mezcal and enjoying each other’s company. Clink your glasses together and take a sip, savoring the smoky flavor of the mezcal.

Ingredients for the mezcal cocktail
- Mezcal, use the brand and type that you like the most.
- Jalapeño simple syrup. To make it dissolve one part sugar – one part water and add a couple of jalapeño slices.
- Lime juice, freshly squeezed lime juice is always best.

HOW TO MAKE JALAPEÑO SIMPLE SYRUP?
Put 1/2 cup of water + 1/2 cup of sugar + 3 slices of jalapeño in a small saucepan over low heat until all the sugar dissolves. Turn off the heat and let it cool.
Remove the jalapeño slices and use it in the watermelon margarita or store it in the refrigerator in a tightly covered jar.
How to make the spicy mezcal cocktail
Combine the lime juice, spicy jalapeño syrup, and mezcal, and mix vigorously for about 10 seconds. Pour into a rocks glass with a salty rim and filled with ice, finish with soda water. Garnish with thinly sliced jalapeño slices.

HOW TO PREPARE A SALTED RIM?
Rub a halved lime or lemon on the rim of each glass and then invert the glass onto a plate with two tablespoons of kosher salt.
