About this recipe

Why did I create this recipe? Well, it’s because it’s incredibly delicious and represents my family’s cultural background. I’m Mexican, and my husband is American, which makes my kids Mexican-American, and we cherish our two cultures. Hence, this recipe is a tribute to our shared love for both cultures. What better way to merge our two worlds than by combining two beloved dishes – waffles and churros?

The batter is more like a waffle batter than a churro batter. Churro batters don’t have leavening agents and are more of a pastry dough than a batter. My recipe is much more easy to make because it is a simple waffle batter.

  • Vegetable milk 
  • Apple cider vinegar
  • All-purpose flour
  • Baking powder
  • Sea salt
  • Maple syrup
  • Coconut oil or melted vegan butter 
  • Vanilla extract
  • Granulated sugar and cinnamon

How to make waffle churros?

The first step is to mix the vegetable milk with apple cider vinegar.

In a large bowl, mix all of the dry ingredients together, and then add the wet ingredients and milk.

As soon as the waffles are ready, sprinkle the white sugar-cinnamon mix over them.

How to serve the churro waffles?

Once the waffles are cooked, carefully remove them from the waffle iron. Serve them as is or use a knife or pizza cutter to slice each waffle into strips, resembling the shape of churros.

One of the beauties of churro waffles is their versatility. While they’re delicious on their own, they can also serve as a canvas for a variety of toppings. Some popular choices include whipped cream, chocolate sauce, caramel drizzle, fresh fruit, or even a scoop of ice cream for an indulgent dessert twist.

How to store

It’s crucial to allow the waffles to cool completely at room temperature before storing them. This step prevents moisture buildup and helps maintain their texture. Once cooled, place a sheet of parchment paper between each waffle to prevent them from sticking together. Avoid covering them in granulated sugar and cinnamon if you plan to store them.

Transfer the cooled and separated waffles into an airtight container or resealable plastic bag. If you plan to consume the waffles within 2 to 3 days, store them in the refrigerator. For longer-term storage, freezing is the best option.

When ready to eat, reheat refrigerated waffles in a toaster or oven until warmed. Reheat them directly from frozen in a toaster or toaster-oven, though they may take slightly longer to warm through.

  • 2 cups vegetable milk
  • 2 teaspoons apple cider vinegar

  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt

  • 1/4 cup vegetable oil, melted coconut oil or melted vegan butter
  • 1 teaspoon vanilla extract

For the coating

  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions
 

  • Preheat your waffle iron according to its instructions.
  • In a small bowl or measuring cup, combine the vegetable milk and apple cider vinegar. Stir well and set aside for a few minutes to allow it to curdle slightly.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, and sea salt until well combined.
  • Whisk together the prepared vegan buttermilk, maple syrup, oil or vegan butter, and vanilla extract until smooth and evenly combined.
  • Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or whisk to gently fold and mix until just combined. Be careful not to overmix; a few lumps in the batter are okay.
  • Lightly grease your preheated waffle iron with cooking spray or additional melted coconut oil. Pour enough batter onto the waffle iron to cover the cooking surface, following the manufacturer's instructions for your waffle iron's capacity. Close the lid and cook the waffles until golden brown and crispy.
  • In a shallow dish or plate, mix together granulated sugar and ground cinnamon to create the cinnamon sugar coating. While the waffle churros are still warm, gently roll each strip in the cinnamon sugar mixture until coated evenly.
  • Serve and Enjoy: They can be enjoyed as is or served with chocolate ganache, caramel sauce, or fruit. Serve them warm.
