This noodle salad is my go-to recipe when I have the most hectic day and no time to cook at all.
I just love the feeling that I can cook something easy and nutritious in a very fast way. Sometimes it is faster to prepare an easy noodle salad like this one that to go and buy “fast food.” I just do not get it how people stay hours in a car line instead of just cooking.
This noodle salad recipe is so easy I’m pretty sure you’ll love it and make it again and again. I used Lotus food noodles, but you could use any brand you like.

Ensalada de noodles con tahini
Ingredients
- 4 cuadritos de noodles ramen mas o menos 300grs.
- 1 taza de chícharo congelado
- 1 taza de elote congelado
- 1 taza de cebolla morada rebanada super delgadita
- .
- 2 cucharadas de tahini
- 3 cucharadas de jugo de limón
- 1 cucharada de vinagre de arroz
- 2 cucharadas de salsa de soya o tamari
- 1 cucharada de aceite de ajonjolí tostado
- 1 diente de ajo
- un pedazo de jengibre de 2 cm más o menos
- pizca de sal
- 1 cucharadita de azúcar *opcional
Instructions
- Pon a cocer la pasta como dice el paquete.
- Rebana la cebolla y deja aparte.
- Para hacer el aderezo, pon todos los ingredientes en la licuadora, prueba, ajusta si es necesario y listo.
- Cuando estén listos los noodles, cuélalos y ponlos en un tazón.
- Pon encima la cebolla, los chícharos y el elote. Vacía la salsa encima y mezcla bien.
- Les puedes poner encima ajonjolí, cebollín, cilantro, etc. Con todo quedan buenos.
