This easy bean celery salad is one of my favorite salads to eat for lunch or as a side dish for dinner. It is easy, delicious, and has fiber, protein, vitamins, and tons of flavor.

About this recipe

This salad is a must at home when we have a pasta dish or pizza for dinner. I love how fresh it is and how its lightness and brightness pair with more substantial or cream-based dishes. It is also perfect as is with a good slice of freshly baked bread. When we bake bread at home, this is my favorite way of eating this bean celery salad.

Ingredients to make perfect celery salad

Ingredients

  • Onion, sliced
  • Apple cider vinegar
  • Celery, washed
  • Fresh dill
  • Parsley
  • White beans or 1 can navy beans
  • Olive oil
  • Salt and pepper

How to make celery salad

  • Slice the onion thinly and place in a bowl with vinegar. Allow to sit for 10 minutes..
  • Chop the celery and fresh herbs and put them on top of the celery. Add the white beans and olive oil.
  • Put the onions and vinegar on top of the beans. Add a good pinch of salt and pepper.
  • Mix and serve.

Tips to make the best healthy

This celery salad is refreshing with punchy onions, beans (for plant-based protein), and tons of fresh herbs. Any bean can be used, but navy beans are creamy. To give this salad a Mediterranean vibe, use chickpeas. Use home-cooked or canned beans. For fresh herbs, use what you have in the fridge: parsley, dill, or fennel fronds.

I used white onion for this recipe, but feel free to use red onions or shallots. But, regarding which aromatic you use, the first step is to “pickle” them with the vinegar.

Ingredients
  

  • ½ white ​​onion sliced

  • ½-¾ cup chopped parsley
  • 1 ½ cup cooked white beans or 1 can navy beans without the liquid
  • 4 tablespoons olive oil

Instructions

You can store it in a tightly closed container for up to 3 days.
