Vegan Banana-nut french toast

French toast with all the benefits of bananas and nuts.

Vegan banana nut french toast with maple syrup and walnuts

About this recipe

This recipe uses bananas as a natural egg substitute, making the french toast 100% vegan. It’s hearty, flavorful, and works beautifully with toppings like peanut butter, fresh fruit, or a dusting of cinnamon sugar. Plus, it’s kid-friendly and easy to whip up with pantry staples.

Why you will love this vegan banana nut french toast

  • No eggs, no dairy – Bananas + plant milk = the perfect custardy texture.
  • Quick & easy – Just blend, soak, and pan-fry.
  • Healthy twist – Naturally sweetened with bananas and cinnamon.
  • Customizable – Add peanut butter, fresh fruit, or swap walnuts for pecans or almonds.

Ingredient notes

Banana nut french toast in skillet
  • Bread: Use slightly stale sandwich bread, sourdough, or Ezekiel bread. Avoid very soft or crumbly gluten-free bread—it won’t hold up well when soaked.

  • Bananas: The riper, the better (lots of brown spots).

  • Plant-based milk: Almond, soy, or oat milk all work.

  • Nuts: Walnuts give the toast a lovely crunch, but pecans or almonds are great alternatives.

  • Spices: Cinnamon and vanilla deepen the flavor and balance the sweetness.

How to make vegan banana nut french toast

  • Make the batter: Blend bananas, plant milk, brown sugar, cinnamon, and vanilla until smooth.
  • Soak the bread: Dip each slice on both sides until coated but not soggy.
  • Cook: Heat a non-stick skillet with a little vegan butter or oil. Cook each slice 2–3 minutes per side until golden brown.
  • Top & serve: Sprinkle with nuts, drizzle maple syrup, and add fruit if desired.
Tip: Use a good non-stick pan or griddle. The banana batter can stick if your pan isn’t well-greased.

Home-cook to home-cook tips

  • Toast your nuts before topping for extra flavor.
  • Use day-old bread for better texture—it won’t fall apart when soaked.
  • If making ahead, keep slices warm in a 170ºF oven while you cook the rest.
  • Add 1–2 tablespoons of peanut butter to the batter for a richer taste.

How to serve vegan banana nut french toast

Stack your slices high, sprinkle with chopped walnuts, drizzle with maple syrup, and finish with cinnamon. Fresh banana slices or berries make it even better. For a more indulgent option, add a spoonful of homemade almond butter or vegan banana bread crumbles on top.
