Strawberry Aperol Spritz

I recently tried a new recipe that puts a unique spin on the classic Aperol Spritz. It's called the Strawberry Aperol Spritz and it's quickly become one of my go-to summer cocktails.

A wine glass filled with a vibrant Strawberry Aperol Spritz, garnished with a metal straw, a strawberry on the rim, and an orange slice inside. Nearby are fresh strawberries, orange slices, a small plate, and a pink cloth on a mauve surface.

About this recipe

This Strawberry Aperol Spritz is my favorite summer drink; it is refreshing, beautiful, and easy to make. It’s the same classic you know and love, just with a fruity twist thanks to sweet strawberries. Whether you use fresh or frozen berries, this cocktail comes together in minutes and tastes like sunshine in a glass.

Why you’ll love this recipe

  • Only 5 ingredients!
  • Perfect for summer—picnics, brunches, poolside afternoons
  • Easily batchable for get-togethers, carnes asadas (bbq get togethers) or la sobremesa
  • Not too sweet—just right, especially with fresh strawberries
  • Customizable with other berries or flavored bubbly
On a pink surface, there’s an Aperol bottle, Mionetto Prosecco, sparkling water, a bowl of sliced strawberries, a gold jigger, and a small plate with an orange slice and strawberry–the perfect setup for crafting a refreshing Strawberry Aperol Spritz.

Ingredients

  • Aperol: The bitter orange aperitif that gives this drink its signature flavor and color.
  • Prosecco: Use a dry Prosecco to keep things balanced.
  • Strawberries: Both frozen and fresh strawberries work.
  • Sparkling water: Adds the perfect fizz—use club soda if you want more bubbles.
  • Orange slice & strawberry

How to make strawberry Aperol spritz

  1. Blend the base: In a blender, blend four strawberries with 2 oz Aperol until smooth.
  2. Build your spritz: Pour the mixture into a large ice glass.
  3. Add fizz: Top with 3 oz Prosecco and 1 oz mineral water.
  4. Garnish: Add a slice of orange and a fresh strawberry. Sip and enjoy!

Variations

  • Muddled version: Muddle strawberries directly in the glass, add Aperol, Prosecco, and water, stir, and strain if you like it smooth.
  • Make it sweeter: Add ½ oz of simple syrup when blending if the strawberries aren’t sweet enough.
  • Make a pitcher: Multiply the recipe by 4–6 and serve in a large pitcher for parties. If you have leftovers, you can freeze them and serve them as granita.

Tips to make the best recipe

The perfect ratio to make a cocktail with Aperol is 3:2:1: three parts Prosecco, two parts Aperol, and one part club soda or mineral water. If you don’t have club soda, use sparkling water. It will have less gas, but it still works. Have this drink with salsa and chips, a good summer burger, or pasta with pesto.

A bottle of Mionetto Prosecco pours sparkling wine into a glass, creating a foamy Strawberry Aperol Spritz. The glass rests on a plate with fresh strawberries and orange slices, set beside a pink napkin on soft pink marble.

Notes

Home Cook to Home Cook Tips

  • Frozen berries? Let them sit out for 5–10 min before blending. They’ll blend smoother.
  • No blender? Muddle or mash the strawberries really well, or just infuse the Aperol for 15–30 min with chopped strawberries and strain.
  • Want more bubbles? Use club soda instead of mineral water.
  • Serving a crowd? Keep the Prosecco and mineral water chilled separately, then pour over the strawberry-Aperol base right before serving for max fizz.
