These granola clusters cookies are made in partnership with ONE DEGREE ORGANICS, a favorite brand of mine that I can truly recommend.

I don’t know why I never thought about this. Making granola clusters is so easy and delicious I believe every house should have them. You can use them as a treat for your kids, as a snack, or even as breakfast.

 Every bite is crunchy on the outside, chewy in the middle and full of flavor. I know these granola cluster cookies have sugar, but when you think about how nutritious the rest of the ingredients are, you’ll come to peace with the idea that they have it. That happened to me! I prepared them with the Sprouted Quinoa Cacao Granola from One Degree Organic Food, which makes them extremely nutritious and delicious.

But let me tell you a little bit more about these granola cluster cookies, I made them with aquafaba, here is an article that you can read if you are not familiar with it. I also added shredded coconut and slivered almonds. To prepare them just mix, wait, form the cookies, bake, wait until they are completely cooled and taste.

Ingredients
  

  • 2 cups sprouted quinoa ONE DEGREE or homemade
  • 1 cup finely grated coconut
  • 1 cup slivered almonds
  • ½ cup aquafaba reduced from a can of cooked garbanzo beans
  • ¾ cup sugar
  • 1 tablespoon chia seeds

Instructions
 

  • Preheat oven to 350ºF degrees.
  • Open the can of garbanzo and pour the liquid into a measuring cup, it usually comes with about ¾ cup of liquid. Add it to a saucer and reduce it by half, it will smell like garbanzo beans, but the cookies will not taste like it.
  • Meanwhile, the liquid is reducing, measure the remaining ingredients and place them in a large bowl.
  • When you have more or less half a cup of aquafaba, turn off the heat, add the sugar and whisk until dissolved. Pour the mixture of sugar and aquafaba into the remaining ingredients. Mix well and let it stand for five minutes.
  • Line a rimmed baking sheet with a silicone mat or parchment paper.
  • Form the cookies by placing 2-3 tablespoons of mixture on the baking sheet. You’ll have about 12 cookies.
  • Put them in the oven for 20 -25 minutes or until golden brown.
  • Remove and cool completely.
  • Stored in a tightly closed jar.

Notes

 When the cookies are in the oven, the sugar can melt and join all cookies. Do not worry; nothing will happen. Just let them cool completely and separate them. If using homemade granola without nuts, follow the recipe as is. If using homemade granola with nuts, eliminate the almonds and add an extra cup of granola.
