
About this recipe
This frozen wine slushie is one of those drinks that looks fancy but takes almost no effort. You freeze white wine in ice trays, blend it with frozen blueberries and a simple lavender syrup, and that’s it. Five minutes of actual work and the result is beautiful, cold, and perfect for summer.
I make this for pool days, beach picnics, or anytime I have friends over and want something more interesting than a glass of wine. Any white wine works. I usually go with Pinot Grigio but Chardonnay and Riesling are great too.
Ingredients
- White wine: any white wine you like. I used Pinot Grigio but Chardonnay and Riesling work perfectly. No need to buy anything expensive.
- Lavender syrup: homemade simple syrup infused with dried lavender. Just water, sugar, and a few sprigs of dried lavender simmered together.
- Frozen blueberries: these give it the color and the icy texture. You can also use blackberries, cherries, or raspberries.

How to make it
There are two ways to do this. The first gives you a true icy slushie texture. The second is faster if you do not want to wait for the wine to freeze.
- Freeze the wine. Pour white wine into ice trays and freeze for a few hours until solid.
- Make the lavender syrup. Simmer equal parts water and sugar with a few sprigs of dried lavender. Let it cool.
- Blend. Add the frozen wine cubes, frozen blueberries, and 2 to 3 tablespoons of lavender syrup to a blender. Blend until slushy.
- Serve. Pour into glasses and garnish with a sprig of dried lavender.
Quick version: skip freezing the wine. Mix cold white wine with frozen blueberries and lavender syrup in glasses. The texture is less icy but still delicious and cold.


Tips
- Any white wine works. Do not buy expensive wine for this. Whatever you have at home is perfect.
- Swap the fruit. Blackberries, cherries, or raspberries all work instead of blueberries.
- Where to find dried lavender: the spice or tea section at your grocery store. I like to buy the full sprigs so I can use them to garnish.
- Any ice tray works. Nothing special needed. Just freeze the wine a few hours ahead.
- Make it a mocktail: use frozen grape juice or sparkling water instead of wine.

Ingredients
Wine slushie
- 1 bottle white wine Pinot Grigio, Chardonnay, or Riesling
- 2 cups frozen blueberries
- 3 tablespoons lavender syrup
Lavender syrup
- 1 cup water
- 1 cup sugar
- 3 sprigs dried lavender
Instructions
Lavender syrup
- In a small saucepan, combine the water and sugar over low heat. When the sugar is almost dissolved, add the lavender sprigs.
- Let it simmer until the sugar is completely dissolved and it has a syrup consistency. Remove from heat and let it cool completely.
Wine slushie
- Pour the bottle of wine into ice trays and freeze for at least 4 hours until solid.
- Add the frozen wine cubes, frozen blueberries, and 3 tablespoons of lavender syrup to a blender. Blend until slushy.
- Taste and adjust. Add more syrup if you want it sweeter.
- Pour into glasses, garnish with a sprig of dried lavender, and serve immediately.
Notes
- Any white wine works. No need to buy anything expensive.
- You can swap blueberries for blackberries, cherries, or raspberries.
- Make the lavender syrup ahead and keep it in the fridge for up to 2 weeks.
- Quick version: skip freezing the wine. Use very cold wine blended with frozen fruit and syrup. Less icy but still delicious.
