
About the Book
Comemos means “let’s eat” or “we eat.” It is my invitation to gather, re-group, and enjoy each other’s company at the table.
I was faced with a real dilemma in my kitchen: I love vegetables and lean into vegetarian and vegan meals, but the rest of my family does not. So I set myself a challenge: create recipes that are delicious, healthy, and easy enough to appeal to everyone at the table; vegans and omnivores alike.
These 85 recipes are so alive with Mexican flavor that nobody feels like they’re missing anything.
From my Green Apple Ceviche to Pineapple Galette to Tortilla Volcanes, every dish is rooted in the authentic Mexican traditions I grew up with, and every single one comes with variations for vegans, vegetarians, and non-vegans, because everyone deserves a full plate.

What is Comemos about?
Comemos — “let’s eat” or “we eat” in Spanish — is my call to gather. I love vegetables and lean into vegetarian and vegan cooking, but the rest of my family does not. My challenge was to create recipes that are delicious, healthy, and easy enough to appeal to everyone at the table — vegans and omnivores alike. This book is built around that idea: authentic Mexican food where everyone feels welcome and well fed.

- La Comida — Lunch and dinner for every day, something light, something a bit more sturdy, mostly recipes from my Mexico City upbringing.
- Para el Fin — These recipes are meant to be shared as main dishes or as perfect sides with your carnes asadas. There are also pasta dishes, which, yes, we Mexicans eat a lot of.
