Ingredients
1small cauliflower
1English cucumber
2 tomatoesdiced or sliced
3tablespoonschopped red onion
1/3cuppitted black olives
1/3cuplemon juice
3or 4 tablespoons of olive oil
1/3cupchopped fresh mint or mint
1tablespoonchopped fresh oregano or 1 teaspoon dried oregano
pinchof salt
Instructions
Chop the cauliflower as small as you want and put it in a large salad bowl.
Mix it with lemon juice and olive oil.
Put the rest of the ingredients and mix carefully.
Try for seasoning and adjust salt, lemon, herbs, etc. if needed.
Serve immediately.

This salad does NOT last long in the fridge, at the most 2 days.
