This easy vegan monkey bread is fun to make and eat. Yeast bread little balls coated in vegan butter, sugar, and cinnamon. This is soft, fluffy, and gooey, the best!
In a large mixing bowl, combine the flour, sugar, and yeast. Add the warm water and mix until a dough forms. Knead the dough for about 5 minutes or until it is smooth and elastic. Cover the dough with a damp cloth and let it rest in a warm place for about 1 hour, or until it has doubled in size.
Preheat the oven to 350 degrees F (180 degrees C). Grease a bundt pan or deep dish pie pan with vegan butter.
Punch down the dough and divide it into small balls about the size of a golf ball. Mix the melted vegan butter, sugar, and cinnamon in a small bowl. Dip each dough ball in the butter mixture, coating it evenly. Place the dough balls in the prepared pan. Sprinkle the nuts (if using) over the top of the dough balls. Place the dough balls in the prepared pan, cover it, and let it rise a second time for about 30 minutes.
Bake the monkey bread for about 25-30 minutes, until it is a light golden brown color and the inside is soft and gooey. Let the monkey bread cool in the pan for about 5 minutes, and then turn it out onto a serving plate.
Make the glaze by mixing all the ingredients and drizzling on top.
Serve the monkey bread warm, pulling it apart with your hands. Enjoy!
