In a large bowl mix the sweet potato puree, maple syrup, almond butter and sugar. Add the flour and cinnamon and mix until a soft and easy to knead dough forms.
Dived the dough into two sheets of floured parchment paper or a silicone mat sprinkled with flour. Roll it out into two rectangles about 1/8 in thick. Divide the dough into large squares with a table knife.
Bake for 20-25 minutes or until firm to the touch.
When ready, take them out of the oven and let them cool a bit before preparing the s'mores.
Notes
To make the s'mores put a piece of dark chocolate on top of a homemade graham cracker, put on top of one or two marshmallows.Put them in in the oven broiler, toaster oven or burn the marshmallow with a culinary torch. Finish the s'mores with another homemade graham cracker on top of the marshmallow.The vegan marshmallows that I use are Dandies, the chocolate I use is vegan and dark chocolate.
