Ingredients
1cupbrown rice
1½cupblack beans (one can of drained beans)
¼cupchopped red bell pepper
½cupcooked sweet potato
¼cupchopped green onions
¼cupchopped cilantro
1tablespoonchili powder You can use chipotle or ancho powder
To begin, preheat your oven to 400°F (200°C). Then, prepare a baking sheet by lining it with parchment paper.
Mix all of the ingredients in a bowl. You can use the back of a spoon to slightly crush the beans so that everything is well integrated.
Form 6 patties and place them on the tray and bake for 20-25 minutes or until they start to brown. Remove from the oven and add cheese, if you are using, and return to the oven until it melts.
