First, you have to massage the kale. Add one to two teaspoons of oil to the kale and a pinch of salt. Use your clean hands to gently rub and squeeze the kale leaves, massaging them with olive oil and salt. As you massage, you will notice the leaves begin to soften and reduce in volume.
Set aside and prepare the dressing. Let the kale rest for about 3-5 minutes, and prepare the dressing.
