1/3cupchopped white onion
3tablespoonschampagne vinegar or white wine vinegar
1-2stalks celeryfinely chopped
1/4cupkalamata or black olives
2tablespoonsof capers
3-4tablespoonsof olive oiloptional
2-3tablespoonsof chopped parsleyoptional
salt and pepper
2large potatoescooked and peeled
Instructions
Cook the potatoes in salted water until thoroughly cooked.
In a large bowl add the onion and the vinegar. Set aside.
When the potato is cooked, roughly chop in bite-size pieces and
