These paletas de sandía are the perfect summer treat — icy, naturally sweet, and incredibly refreshing. Made with ripe watermelon, lime juice, and just a touch of sugar, they’re an easy homemade popsicle everyone will love. Add chile powder or Tajín for a spicy Mexican twist.

Ingredients
4cupscubed ripe watermelonseedless if possible
2–3 tablespoons sugaradjust to taste
Juice of ½ lime
Optional: 1–2 teaspoons Tajín or chile powder
Instructions
Blend – Add watermelon, sugar, and lime juice to a blender. Blend until smooth.
Taste & adjust – Check sweetness and add more sugar if needed.
Strain (optional) – For a smoother texture, strain through a fine mesh sieve.
Add chile (optional) – Stir in Tajín or chile powder, or sprinkle some into the popsicle molds before pouring the mixture.
Freeze – Pour mixture into popsicle molds, insert sticks, and freeze for 4–6 hours or until solid.
Serve – Run molds under warm water for a few seconds to release the paletas.
Notes
For a chunky texture, add diced watermelon pieces to the molds before freezing.
Use very ripe watermelon for the sweetest paletas — you might not need sugar.
