Ingredients
3small cucumbers in pieces
10mint leaves
3limes, peeled and seeded
¼cupsugar
4cupswater
Instructions
Cut the cucumbers into large pieces. No need to peel them.
Peel the limes, remove the white pith, and check for seeds. Or use just the juice.
Separate the mint leaves from the stems.
Add cucumbers, limes, mint, sugar, and water to a blender. Blend until smooth.
Strain through a fine-mesh sieve. Press the pulp with the back of a spoon to extract all the juice.
Taste and adjust sugar if needed. Serve in glasses with lots of ice.
Notes
1. Whole lime vs. juice: the whole peeled lime gives a more intense, slightly bitter flavor. Use just the juice if making ahead or if you prefer a milder taste. 2. Best freshly made. Can be refrigerated up to 2 days. 3. Adjust sugar to taste. Also works with agave, honey, or no sweetener at all.
