Ingredients
4garlic clovesgrated
2tbspgrated ginger
1tbspvegetable oilplus 1 tbsp extra for sauteeing the vegetables
1/2cupsoy sauce
2tbspmaple syrup
2tbspsesame oil, toasted
1tspsalt
1tbspfreshly ground black pepper
16ozNoodles of your choice
1.5lbsShiitake mushroomssliced
1cupcelery, sliced about half an inch slaiced
Sesame seeds for garnish
Instructions
In a small bowl, whisk together soy sauce, grated ginger, grated garlic, maple syrup, vegetable oil, sesame oil, salt, and black pepper.
Cook noodles according to package instructions.
Heat vegetable oil in a large skillet over medium-high heat.
Add sliced Shiitake mushrooms and stir-fry for 3-4 minutes. Add the celery.
Add the noodles to the pan and pour the sauce over the mushrooms and celery and stir-fry for an additional 2-3 minutes.
Serve the stir-fry and garnish with sesame seeds.
Notes
Feel free to choose any noodles you prefer. The choice is yours, from classic ramen and udon to soba noodles and even pasta.
You can use low sodium soy sauce.
Sub the shiitake mushrooms with cremini or even buton mushrooms.
