Ingredients
3cupspeachdiced or sliced
1cupof raspberries
1tablespoonof lemon juice
1tablespoonof flourtapioca starch, or any gluten-free flour
CRUNCHY CRUST
1cupwalnuts
1cupoatmeal
4tablespoonsof maple syrup
2tablespoonsof coconut or olive oil
1tablespooncinnamon * optional
Instructions
Pre-heat oven to 350ºF. Dice the peach, put it in a bowl, and mix it with the raspberries. Add the tablespoon of lemon juice and the tablespoon of flour.
Set it aside.
In the food processor, add the oatmeal and walnuts, pulse 3 to 4 times. The idea is to coarsely ground the ingredients look for a thick and sand-like mix, not an an-homogeneous one.
When ready, add the maple syrup and the oil. A sticky mixture will be formed.
If you are using cinammon add to the food processor with the maple syrup and coconut oil.
Put the fruit in a baking sheet and on top add the mixture of oatmeal and walnu evenly.
Bake it for about 20-25 min.
It is ready when the top is golden and the fruit smooth.
