These Vegan Café con Leche Blondies are a fun twist on the classic brownie. They have a softer flavor that reminds you of a well-crafted café con leche. Preheat the oven to 350°F and prepare the pan. Use butter, oil, or non-stick spray to lightly coat the entire inner surface of the pan.
Cut a piece of parchment paper large enough to cover the bottom and sides of the pan.
In a large bowl, melt the butter, add the sugar, maple syrup, vanilla, and mix very well.
Add the dry ingredients, mix well and then add the coffee and milk. Mix and pour into the prepared pan.
Bake for 20 or 25 minutes, remove when the top is shiny and firm. Remove from the oven and allow to cool completely.
