Prepare your tools: Make sure you have a sharp chef’s knife, a cutting board, and a bowl or container to hold the pineapple pieces.

Lay each quarter flat on the cutting board and cut it into slices of your desired thickness. Preheat the oven to 400ºF.

Mix the chipotle pepper powder, sugar, and salt in a dish. Sprinkle the mixture on top of the pineapple.

Put in the oven for 15 minutes or until the sugar begins to brown.

Remove from the oven and finish with roughly chopped peppermint. Enjoy!
