On the menu week #21



We’re just about to start summer vacations, and I can’t be more excited. I’m ready for long days of sun and pool with fresh, easy-to-make meals.

MONDAY, to start the week off right, nothing like a good breakfast full of antioxidants and vitamins. This acai smoothie bowl is perfect for giving us all that energy we need to start on the right foot.

TUESDAY these bean fajitas are perfect for eating like a taco; you can eat them on top of a bed of greens, in a sandwich, in a quesadilla, they are perfect to have in the fridge for a quick meal.

WEDNESDAY this pasta with cherry tomatoes is one of the easiest pasta recipes. Apart from being one of the kinds of pasta that goes well with everything, you can serve it hot, or at room temperature; it is also perfect as a side dish or as a main dish.

THURSDAY. Have you ever made chamoy at home? It is one of the most Mexican sauces out there, and it is perfect for helping encourage your family to eat fresh vegetables and fruits.

FRIDAY, nothing like a fresh and delicious limade. This limeade, aside from being very good for us, has chia.

SATURDAY is the day that I disconnect the most and rest. Therefore, a delicious and perfect sandwich for the weekend never fails. ThiApartom being delicious, is this kale sandwich very easy to make.
