This is one of my favorite meals of all time, Asian flavored vegan hamburger. Just imagine a vegan hamburger patty made with potatoes, chickpeas, ginger, garlic, tamari and sesame oil. And all topped with fresh and crispy veggies and Sriracha Mayo! YUMMMMMMM.

This is the mayo that I use, and this is the Sriracha sauce that I love. You can get them both at Wholefoods, Amazon or anywhere. Of course feel free to use whichever you like best.

Ingredients
  

  • 2 medium/large potatoes cooked and peeled
  • 1 can chickpeas drained
  • 3 cloves garlic minced
  • 2 teaspoons minced ginger
  • 3 tablespoons chopped fresh cilantro
  • 1-2 teaspoons toasted sesame oil
  • 4 tablespoons tamari or soy sauce
  • pinch of salt
  • 1 tablespoon oil neutral taste
  • 6 whole wheat buns
  • 1 avocado sliced
  • 6 large radishes sliced
  • 4 large spinach handfuls
  • 1/4 cup vegan mayonnaise
  • Sriracha sauce to taste
  • Dijon mustard to taste

Instructions
 

  • In a large bowl crush the potatoes with a fork. Add the beans and crush them until they are mixed with the potatoes.
  • Add garlic, ginger, coriander, sesame oil, tamari or soy and pinch of salt. Mix well with your hands and form six patties.
  • On a griddle or skillet over medium heat, add the tablespoon of oil and brown the patties until golden brown on each side.
  • Meanwhile, mix the vegan mayo with the Srirach sauce
  • To assemble the burgers, spread Dijon mustard on each bun, add a pattie, spinach, radish slices, avocado, and finish with the spicy delicious mayo
